Had dinner with a Florida fisherman last night. He told me that Bowfin are perfectly "edible". Bowfin are pretty common but I know of nobody else who has even tried to eat one? There are youtube videos showing how to fillet and fry Bowfin! Any opinions or advice? Dick

You mean you have actually tried to eat one? Dick Yes, I did, once...the meat is very mushy once cooked, tastes ok, but consistency is not palatable. Probably better suited to make fish stock or mix into soup.
