Salmon Ceviche with Habanero Chile and Mustard Seed
10 ounces FRESH salmon fillet 1/2 cup finely chopped purple or red onion 1/4 cup diced, peeled, seeded cucumber 1 fresh habanero chile, stemmed, seeded and finely chopped 1 tablespoon yellow mustard seeds 1 teaspoon sesame seeds 1/4 cup freshly squeezed lime juice 1 tablespoon rice wine vinegar 1 to 2 teaspoons honey 1 tablespoon chopped fresh cilantro 1/2 teaspoon salt 1/8 teaspoon freshly ground black pepper
Remove skin from salmon and pull out any small bones. Cut the salmon into small dice, about 1/4 inch. In a nonreactive bowl, fold together the salmon, onion, cucumber, habanero chile, mustard seeds, and sesame seeds.
In a nonreactive small bowl, stir together the lime juice, vinegar, honey, cilantro, salt, and pepper. Fold into the salmon mixture until eveny coated. Cover and refrigerate until well chilled, about 2 hours, stirring occationally.
Serve in shallow bowls.
The only modification I have made was using a milder chile like jalapenos.

The entire fam loved it Forrest...absolutly no ill effects. For my next batch, I'm going to try some fish that has been frozen. Up till now, it's always been fresh, caught the day before. Attachments:
