2 teaspoons paprika 1 teaspoon chili powder 1 teaspoon cumin 1 teaspoon sea salt 4 - 6oz fillets skin on 2 teaspoons maple syrup
1. mix first 4 ingredients together and rub over fish 2. pre-heat grill on medium with lid closed..once heated turn gas to med-low 3. heat cooking side of cedar planks for 5 minutes 4. place fillets skin side down on planks and close grill lid 5. cook approx 15 minutes then drizzle maple syrup over fish, close lid and cook 5 more minutes
note: soak cedar planks prior to cooking to avoid them catching on fire( have water ready just in case) do not over cook!!!
this is the best tasting salmon I've ever had and the cedar plank keeps it so moist

Me: Hey dad this sounds great. What does using the cedar planks do? Dad: Burn the piss out of the planks. Apparently he missed the note
