Had some left over shrimp my wife made from a couple days ago. She had washed in Franks Hot sauce and then dusted with bread crumbs. Baked and serve.
Tonight I took left over spiced shrimp and ran through mini food chopper/processor. Added a little more Franks sauce, little water, and more bread crumbs to make a paste.
Sliced fillets into stripes of about 1/2' thick. Applied layer of shrimp paste to fillets, rolled them up, and put in toaster oven at 325 degrees till done (about 10-15 minutes). Put a little butter on top so wouldn't burn/dry out. Came out very good.
Not much of a recipe I suppose but was fun and damn tasty for a spur of the moment experiment. Could do it with any light fish.

Sounds good bassman. It will be june before I get to try stripers but I can't wait!
