Here's my Mom's recipe passed down to us:
soak 1lb. of yeollow eye beans in 2 quarts of water overnight the next day simmer the beans and water with 1 t salt for 2 hour then combine the beans in a bean pot with the following ingredients 1/4 salt pork 3-4 slices of good smoky bacon 1 large onion chopped 1/2 cup brown sugar 1/2 cup pure maple syrup 1/4 cup molasses 1 T dried mustard 1 T black pepper Cook with top on at 325 degrees for 4-5 hours Cook last hour with top off
Sometimes I put some barbeque sauce in for a differnt flavor Good luck!!

One thing you have to watch out for is don't let them get dried out. Before you put them in to bake make sure the water is just over the beans. Then check them after they've baked for 2 hours and again add water so they'reall moist.
