So since I'm new to trolling to cold water, what is the difference between a Slide & Dipsy? To me they look the same, just different manufacturers. Anyone have insight on this they care to share?

We occasionally run dipsey's but, that's mostly because that's what we already have. The biggest issue with the dipsey is that it is fixed inline. The plus side is being able to adjust the tracking on it so that they pull out away from the boat. The downside is that since they are fixed, that means you are going to have the extra drag when fighting a fish. But, there aren't any mechanical moving parts so there's nothing to fail on it other than the knots in the line.
With the slide diver's, you can also set the keel to fish away from the boat but, when the fish hits, it trips the diver to release the drag so it runs loose on the line. Certainly a better overall option and probably what I would go with if I was purchasing something new but, keep in mind that it does have a mechanical function to it that could potentially fail. I would also suggest that you are going to want a heavier backing line for it to secure on and just plan on running a lighter leader out to the lure.
