This is a recipe that a buddy ( Tom M. ) cooked up for us (ron-digitroll/Terry-fishmaster/ gary- techman and I ) out to the niagra bar this spring and we all agreed it was a winner. Tom used striper,and tried it with perch fillets, walleye.
1-2 lbs of fish, cubed up for food processer 1 egg 1-2 table spoons of capers with juice 3/4 cup of italian bread crumbs 2-3 chopped scallions or 1 small onion 1/2 cup of mayo pepper to taste hot sause to taste is a option celery if you like olive oil 3-4 table spns. butter Process all together, exept oil & butter until blended, let sit for 10-15 min. to come together. heat up oil in skillet with butter for flavor to about 1/4 inch deep. make mixture into patties, drop into oil until golden brown, turn over until golden brown.
