A great easy Salmon recipe that will impress your friends. "The Sugar Shack" Fresh fillet of Salmon grilled with cinnamon, finished with maple cream sauce and toasted walnuts.
Hint: When preparing salmon on a open grill it is easier to handle if the skin is left on, always cook the flesh part first. Finish the cooking by placing the skins side on the heat. After a few minutes run the flipper between the flesh and the skin, it will come off like magic. Also when cooking fish that is not covered or wrapped plane on about 13 minutes per thickness inch.
1) Dust the flesh side of the Salmon fillet with cinnamon and place flesh side down on the grill. Try to only turn the fish when you need to (twice on each side is usually enough).
2) Start the sauce. Put one cup (for every serving) of heavy cream and a 1/4 cup of maple syrup in a large sauce pan and bring to a boil, stir so it doesn't boil over and reduce until thickened. One serving takes about 8 minutes and i do not recommend large batches (3portion max), do small ones and keep it warm in the oven or on the warming rack of your grill.
3) put some walnuts in aluminum foil and roast on the grill.
BAM finished.
Place the Salmon on a plate, top with the maple cream sauce and garnish with walnuts.
A nice tossed salad, a side of wild long grain rice and a chilled bottle of your (or hers) favorite white wine.

That looks tasty, simple and different. I've used syrup while smoking fish but never tried it as a sauce.
