Excellent Recipe Randy! Very delicious. We had this last night. My variation: Otter Creek was replaced with Miller Lite (It's what I like), and I didn't reduce the liquid to use as a sauce. No sauce needed! I also added a pinch of ground cayenne pepper to compliment the fresh ground black pepper that I sprinkled on the fish as it hit the simmering sauce. The rice had a small pat of butter and black pepper before the fish was placed on it.
We'll be having it again I assure you.
