INGREDIENTS:
* Roll of Ritz crackers/ crushed * Flour * 2- Eggs * 2- walleye/8-perch fillets (any white flakey fish/ IE: Haddock) * Salt and Pepper * Canola oil
Crush Ritz crackers in a large ziploc bag and place in a bowl
Prepare fillets/ remove skin. Pre-heat oil in large cast iron skillet with enough oil to cover half height of fillets.
Roll fillet first in flour(seasoned with salt and pepper), then dip in egg (lightly whipped) and then roll in crushed Ritz crackers
Place fillets in hot oil and cook until lightly browned, flip and repeat. Remove from oil and place on plate with paper towels to absorb extra oil. Salt to taste and ENJOY!!!

I like this recipe a lot, The saltiness of the Ritz is amazing with the jack perch we caught on Bomoseen last winter.
