This batter puffs up nicely, due to the addition of egg whites. It is not meant to be dipped in any breadcrumbs before frying. I used salmon for the fish, and enjoy my fish in finger size pieces. 1C. Flour 1/2 Tsp Salt 1 Tsp Black Pepper (Other Spices to taste) 1C. Beer 2 Egg whites, beaten until stiff peaks form Add dry ingredients in a bowl. Add beer and mix together. At this point, in a separate bowl, I beat the egg whites until stiff peaks form. These whites are then folded into the beer batter mixture with a spatula. Dip in your fillets and cook on! I first tried this without beer since I drank the last one, used lime seltzer instead. Then tried it agin with beer. Both times it came out great, although I realized I really should get an egg beater, whipping up egg white peaks with a fork is a chore.
