Sushi -- Makes 10 Rolls (1/2 recipe is good for family supper, or apps w/ another family)
An appetizer or meal. Sushi rocks! Mix up your ingredients for variety. For party's I have a mix from cucumber rolls to bacon, smoked salmon, cream cheese, and sweet potato rolled in texmex rice. I love taking a healthy a step to far.
Ingredients:
Sushi (Short Grain Rice)
Rice Wine Vinegar
Nori sheets
Toppings of your choice
Cook package directions for 2 cups short grain. When cooked, add 1/3 cup rice wine vinegar. Mix and let sit with cover on for 15 minutes off heat. Take off lid and fluff. Let cool down to room temp. Use this time to prep ingredients. Peppers, cucumber, carrots, avocado, baked sweet potato, smoked salmon, bacon, crab, fishfry, cream cheese, etc Whatever you want!!!
Get a good setup going for rolling. I keep my rice in front of my nori, and a bowl of water w/ brush to the side for sealing up the end once the rice/ toppings are ready to be rolled. Toppings to the side.
Wash hands and spread rice out on nori sheet at 1/8" to within 2 " of top of sheet. Rice is sticky, toppings are messy, so I rinse hands and keep a towel close on hand to not fowl up the out side of nori roll. Lay chosen toppings in middle. Brush nori end w/ water brush. Roll 'em up and lay 'em seam side down. By the time they are all rolled up, the nori will be hydrated enough to cut up. 6 pieces per roll. Wasabi, soy, and serve. Mmm.
