This works great for any cut of venison from backstrap cutlets, steaks or stew meat which I like to do over a bed of rice. Take the following in a wok pan or large non stick fry pan........ 1/3 stick butter 1/8 cup cider vinegar 1/4 cup Maple Syrup 1/8 cup Red Hot sauce if you like it spicy or 1/4 cup of good quality BBQ sauce combine all ingredients and melt down and blend together... add your venison and mix with all ingredients....turn off heat and let sit for 10 minutes...sprinkle some 'outdoor seasoning" or garlic and onion pwder, salt and pepper and mix venison. Turn up the heat to high and continue to mix venison with the sauce until the sauce starts carmelizing.......try to keep from over cooking the venison....For the stew meat put it over the rice and pour the marinade left over the rice......for Steaks and backstraps remove and place on the side of the rice and use the marinade on the rice. Found this out this fall when I added the maple syrup for a bit of a different taste. I know have included the maple syrup in my jerky as well........It realy makes a difference and it is definitely delicious.
